Harvest Table President and Founder Mary Thornton awarded Elon University's highest service honor

Harvest Table Culinary Group President and Founder Mary Thornton has been honored with Elon University’s prestigious Elon Medallion, recognizing her commitment to service and lasting impact on the university’s hospitality experience. Under Thornton’s leadership, Harvest Table continues to build on that legacy as it enters a new academic year focused on innovation, meaningful hospitality, and supporting the evolving needs of campus communities. 

Elon University was among Harvest Table’s founding partners when it launched in 2018.  

“I am truly honored to receive this recognition,” said Thornton. “While my name is associated with this award, no meaningful achievement happens alone. I am deeply grateful to the many Elon University partners, colleagues, mentors, and family members who have supported Harvest Table’s journey.” 

Since founding Harvest Table, Thornton has championed a service-driven, community-focused approach to dining that prioritizes student wellbeing, sustainability, and meaningful human connection. That vision continues to shape Harvest Table’s efforts for the 2026-2027 academic year, including a new partnership at Ohio Wesleyan University, enhanced dining experiences, and innovative restaurant concepts designed to meet the evolving needs of today’s students. 

“Highly respected for her work ethic, expertise, relentless commitment to excellence, Mary has demonstrated a deep understanding of Elon’s mission and the critical role dining plays in building community and contributing to a welcoming campus environment,” said Janet Williams, Elon University Vice President for Finance and Administration and Chief Financial Officer. 

Most recently, Harvest Table Culinary Group made a gift supporting Elon University’s Slattery Center, reflecting the company’s ongoing commitment to student health and wellness.  

“I accept this medallion with humility and deep appreciation, and as a reminder to continue serving others, leading with purpose, and striving to make a positive difference for Harvest Table Culinary Group’s campus partners,” Thornton added.
