Teaming Up with Father Farms to Provide Never-frozen French Fries
Everyone’s heard the phrase “fresh is better than frozen.” At the University of Rochester, we prove it with a new type of french fry. In collaboration with Father Farms, a New York food-tech startup, never-frozen french fries are now on the menu. Prepared at a specific pressure using carbon-dioxide, instead of steam and water, these fries are shelf stable at room temperature, offer a better tasting experience and cook in half the time.
